Preheat the oven to 200C

To make the pastry sieve the flour and salt into a large bowl

Add the butter and make into breadcrumbs using fingertips

When you have breadcrumbs make a well in the middle and using a knife add the water a little at a time to make the dough

Leave pastry dough to one side to rest while you make the sponge

To make the sponge add the butter and sugar to a bowl and mix well with a wooden spoon until light and fluffy

Whisk the 2 eggs together in a jug and beat them into the mixture

Fold in the flour

On a floured board roll out the pastry and using cutters cut out small circles

Place the pastry circles into a bun tray

Add half a teaspoon of jam to each pastry circle

Using a teaspoon put the sponge mixture on top of the jam (about a teaspoon for each one)

Bake in the oven for 15-20 mins then leave to cool
