   Trim meat of any fat.

   Cut 1/8 inch deep diamond pattern into both sides of beef.

   Place meat in glass dish.

   Combine tequila, lime juice, oil, orange peel and pepper flakes.

   Pour over beef.

   Marinate 2 hrs, turning meat over at least once.

   Cook and stir onions and salt in butter till tender (approximately 20 to 30 min).

   Set aside.

   Grill meat 6 inches from coals on medium heat for about 30 min (medium rare) basting with marinade and turning frequently.

    Slice beef across the grain at a slanted angle.
