1 lb. smoked ham hock
1 Tbsp. butter
1 Tbsp. olive oil
2 Tbsp. shallots, minced

1 tsp. cumin
1 tsp. coriander
1 c. cream
salt and pepper

In soup pot, combine lentils, beef stock, onion, carrots, celery, cloves, pepper, parsley, thyme and ham hock.

Bring to boil; turn down to simmer.
