Ingredients: 200 grs brown or French style lentils soaked overnight; 1 tablespoon apple cider vinegar; 2 tablespoons extra virgin olive oil; 1 large red or brown onion diced; 2-3 large garlic cloves crushed; Half capsicum diced; 1 small choko cubed; 1 large potato cubed; 1 large carrot cubed; 1/2 cup tomato puree; 1 large zucchini cubed; Handful green beans chopped; Sea salt to taste; Freshly ground black pepper; 1 teaspoon cumin; 1 teaspoon turmeric; 5 bay leaves; 1 litre water; 2 ripe tomatoes diced; Handful coriander leaves chopped for garnish; Sourdough bread to serve (optional)

Servings: persons

200 grs brown or French style lentils soaked overnight
1 tablespoon apple cider vinegar
2 tablespoons extra virgin olive oil
1 large red or brown onion diced
2-3 large garlic cloves crushed
Half capsicum diced
1 small choko cubed
1 large potato cubed
1 large carrot cubed
1/2 cup tomato puree
1 large zucchini cubed
Handful green beans chopped
Sea salt to taste
Freshly ground black pepper
1 teaspoon cumin
1 teaspoon turmeric
5 bay leaves
1 litre water
2 ripe tomatoes diced
Handful coriander leaves chopped for garnish
Sourdough bread to serve (optional)

Soak the lentils overnight in 3 cups of filtered water and add a tablespoon apple cider vinegar to the soaking water.

Heat olive oil in a large saucepan, add garlic, onion, capsicum, turmeric and cumin and cook stirring for 1-2 minutes until onion is translucent.

Add the lentils, tomato puree, bay leaves and water and simmer for 8-10 minutes. Then add cubed choko, carrot, potato and green beans and let it simmer for 20 minutes.

At this point add cubed zucchini and diced fresh tomatoes. Let the soup simmer another 10 minutes until the zucchini and remaining vegetables are tender.

Season with salt and black pepper and serve.
