Preheat oven to 200aC (or 180aC fan). Lightly oil a large roasting pan

Pat chicken dry with paper towel. Tuck wings under. peel and chip 4 garlic gloves. Place 2 lemon halves, chopped garlic and thyme sprigs in cavity. Use kitchen string to tie the legs together. Place in prepared pan

Arrange potatoes, unpeeled garlic cloves and 6 lemon halves around the chicken. Squeeze remaining lemon halves and pour half the juice over chicken and the remaining juice over potato. Spray the chicken and potato with oil. Roast for 1 hr

Add the tomatoes to the pan and turn the potatoes. Roast for a further 30 mins or until potato and chicken are golden brown and tomatoes have softened slightly.
