1 red onion finely chopped

2 teaspoons ground cumin
2 teaspoons ground coriander
1 pound ground lamb
1 ounce fresh breadcrumbs
8 dried apricots finely chopped
1 tablespoon mint finely chopped
14 ounces diced tomatoes
4 ounces couscous
1 cucumber chopped
lemon wedges to serve

In a frying pan, heat half oil over medium heat. Saute onion and garlic 3-4 mins, until tender. Add spices and cook 1 min, stirring. Spoon half mixture into a large bowl. Add lamb, breadcrumbs, apricots and mint. Season to taste and mix well. Roll level tablespoons of mixture into balls.

Heat remaining oil in same pan over medium heat. Cook meatballs 6-8 mins, turning, until evenly browned. Add remaining onion mixture to pan, along with the tomatoes. Simmer 4-5 mins, until meatballs are cooked through completely.

Meanwhile, prepare couscous according to package instructions. Transfer to a large dish and mix in cucumber. Season to taste and top with meatballs and tomato sauce, to serve. Accompany with lemon wedges.
