Heat 1 tbsp of oil in a frying pan and saute the carrots, spring onion and pepper for about 4 mins over medium heat. Add the curry powder and season to taste. Set aside to cool.

Preheat the oven to 400u00b0F. Mix the ground turkey with the cooked vegetables, breadcrumbs and cilantro then make 4 flat burgers. Heat 2 tbsp of oil in a frying pan and cook the burgers for about 4 mins on each side. Put a slice of cheese on each burger then place them on a baking sheet. Bake for about 5 mins.

To serve, drizzle the avocado with lemon juice. Spread the bottom half of the hamburger buns with ketchup and mayonnaise. Top them with tomatoes, arugula, lettuce, turkey burgers and avocado and finish with the top halves of the bun. Serve the turkey burgers with cherry tomatoes and celery.
