Mix meat well adding at the last the parmesan cheese Form into a long roll about 12 inches long. Cut into 3 equal pieces. In roasting pan place 3 or 4 stalks of celery. Place the cut pieces of meatloaf on top of celery. Cook 1/2 hour at 400 degrees to sear the outside. Lower the heat to 325 degrees and cook for 1/2 or 3/4 of an hour. until cooked through

Place diced celery, peppers and onion in a large skillet. Cook over moderate heat until beginning to soften. Add cayenne pepper and olive oil. cook 2 minutes then add tomatoes with their juice. Wisk flour into melted butter until smooth. Add to skillet and stir thoroughly, to mix well.

Cook at a simmer for 1/2 to 3/4 of an hour

When meatloaf is done Slice into 3/4 inch slices and serve with sauce.
