Wash the wings and wipe off the water.

Make cuts to underside (opposite side from the skin side).

Heat a pan with a generous amount of sesame oil and fry from the skin side facing down.

Don't turn it until it has a golden brown color.

Turn over when the color is golden brown and cooked through thoroughly.

Check if it is cooked through or not, peeking in the cuts you made in Step 1.

When the chicken is cooked through, wipe off the excess oil in the pan with a paper towel.

Add the seasoning ingredients, soy sauce, sake, mirin and sugar you mixed in advance to the pan and coat the wings well in low heat.
