Delicioso Carrot Souffle

   Boil carrots in a large pot of water until tender (about 15 minutes).

   Drain water.

   Put about half the carrots into a blender, then put all the rest of the ingredients in, and top with the rest of the carrots.

   (This seems to get the ingredients all blended together quicker).

   Blend everything togther until nice and smooth.

   Pour into a 2 quart casserole dish that has been buttered.

   Bake 40-50 minutes at 350 degrees.

   Can sprinkle with cinnamon/powdered sugar for a prettier presentation but I usually just leave it as it is.
