Ingredients: 1 pkg. frzn minced spinach, thawed; 2 tbsp. butter; 1/2 c. onion, minced; 2 tbsp. flour; 1 1/2 c. chicken broth; 1 1/2 c. water; 1 c. heavy cream for warm soup or possibly 1 c. lowfat sour cream for cool soup; Salt and pepper to taste; Dash of Tabasco; Healthy pinch of nutmeg

Heat the butter in a kettle and add in the onion.

Saute/fry till the onion is barely cooked, and then sprinkle with the flour and stir.

Add in the broth and water and bring to a boil.

Add in the thoroughly liquid removed minced spinach and bring to a boil again and then cook just one or possibly two min.

Remove from heat and cold slightly.

If serving chilled, cold, then add in lowfat sour cream and chill.

If serving warm, return to kettle, heat thoroughly and add in the heavy cream and heat through.
