2 c. applesauce
2 c. bread crumbs

1/2 c. cane syrup (more, if desired; sweeten to taste)

Skin possum. Remove glands and entrails.

Scrape clean and scald in boiling water. Rub inside and out with salt and pepper. Set in a cool place.

Stuff with pecans, applesauce and bread crumbs.

Cover with lemon juice, slices of sweet taters and cane syrup. Add 1 cup of water to pan. Bake at 325u00b0, basting often, until tender. Add liquid, if needed.
