Preheat oven 350 degrees F. Lightly spray 13x9 inch pan with cooking spray.

In a medium bowl mix cream cheese, sugar and egg.

Combine flour, sugar, baking soda, cinnamon and salt into a large bowl.

Meanwhile, place apples, margarine, sugar and cinnamon in a medium saucepan.

In a large saucepan over medium heat bring whipping cream to a light boil.

Add sugar and cook 5-6 minutes or until mixture is smooth.

Remove from heat and stir in margarine, Brandy and vanilla.

Chill the small bowl and beaters of an electric mixer.

Beat the cream in chilled bowl until it begins to thicken and soft peaks form.

Add the powdered sugar and vanilla and beat until stiff.

Spoon each desired serving of cake into a Martini glass.

Next, add a serving of cooked apples over cake.

Drizzle Sauce over cooked apples and cake.
