Cider-Barbecue Pulled Pork Over Mashed Potatoes

   combine the ribs, cider and barbecue sauce in a large sauce pan over medium heat.

   bring to a slow boil and reduce the heat to maintain a steady simmer

   cook for about 1- 1 1/4 hours until pork is tender and the sauce is thickened

   after about 45 minutes place the potatoes in a medium sauce pan and cover with cold water and bring to a boil

   cook till tender, drain off the water return the potatoes to the pan

   add milk and butter, then mash

   fold in the parsley, add salt and pepper to taste

   cover and set aside

   use two forks to shred the pork mixing back into the sauce

    serve the pork over the mashed potatoes.
