Add the sugar, 1 tbsp at a time, beating until thick and glossy. Whisk in the cornstarch, vinegar and cocoa powder. Spoon 12 ovals of the mixture onto prepared baking sheets and bake 45 mins, until crisp on the outside, but still soft inside. Cool completely in the oven with the door ajar and the heat switched off.

Meanwhile, for the cherry sauce, drain the cherries, pouring the syrup into a saucepan. Bring the syrup to a boil and simmer 2-3 mins, until reduced slightly. Cool.
