Chicken Spaghetti – a delicious recipe with chicken, pimentos, onions, olives, bell peppers, spaghetti. Easy to follow and perfect for any occasion.

1 large chicken
2 small cans pimentos
2 large onions, chopped
1 small can sliced olives
2 bell peppers, chopped
2 (12 oz.) pkg. spaghetti
2 cans Ro-Tel tomatoes
2 lb. Velveeta cheese, melted
1 small can sliced mushrooms
1 large can English peas
1 stick butter

Cover chicken well; salt and cook until tender. Stand in broth to cool. Then remove and debone. Save broth. Saute peppers in butter on low heat. Add chicken to water (broth) and cook. Add cheese and stir until melted. Add onions, peppers, tomatoes, peas, chopped chicken, olives and pimentos. Mix well. Makes 2 large 13 x 9 casseroles. Bake until heated. Freezes well.
