preheat the oven to gas mark four leaving the oven tray you will be using in the oven

make three deep slits along the chicken breast ensuring not to go all the way through

dice the onion,Tomatoe,and garlic finely then add to a bowl along with the olive oil

add the tea spoon of onion vinager and the Philadelphia to taste along with the salt and pepper and mix together

add your mixture on top of the chicken add little bits at a time starting by placing the mixture in the slits you made earlier and then pile a little on top

then simply add the Bacon on top and a piece of cheese on top of the bacon (sometimes I find it best to place the cheese on in the last ten minutes of baking ) cook until slightly brown (ensure chicken Is cooked through and is piping hot before serving

you can experiment with the ingredients and obviously just add more of everything if cooking for more than two people.
