Chop the onions.

Pare and quarter the potatoes and carrots. Place butter and oil in a frypan or Dutch oven, then turn heat to medium.

Add onions and cook until onions are soft, about 5 minutes.

Push onions aside and add chicken pieces.

Sprinkle with 1 teaspoon garlic powder and 1 teaspoon oregano and brown slightly for about 5 minutes.

Turn chicken over and sprinkle with remaining garlic powder and oregano.

Brown this side slightly for an additional 4 minutes.

Add potatoes, carrots and water.

Sprinkle with salt and pepper.

Place lid on and turn heat to high, just long enough until water starts to boil.

Turn heat to low and simmer for 35 minutes.
