Whisk eggs and 1 tbsp sugar. Add flour and 2/3 cup milk. Set aside for 30 mins.

For poached apples, combine apple slices and apple juice and cook for 2 mins. Remove from heat and allow to cool.

For cheese filling, combine cream cheese, cottage cheese, lemon juice, 4 tbsp sugar and red currants. Set aside.

For the caramel sauce, caramelize remaining sugar. Add cream and remaining milk, bring to a boil and simmer until caramel is dissolved and liquid thickens.

To make blintzes, thinly coat a frying pan with oil and heat until smoking. Add 1/4 of batter, tilt pan to coat bottom and cook for 2 mins. Flip and cook for 2 mins on the other side. Remove from pan and keep warm. Repeat 3 times.

Spread each blintz with cheese mixture then top with poached apple and roll up. Cut into 4 pieces and drizzle with caramel sauce. Decorate with reserved red currants, apple slices and mint.
