Name: Butterscotch Party Cake

Ingredients: 2/3 c. butterscotch pieces; 1/4 c. water; 1/2 c. shortening; 1 c. sugar; 3 eggs; 2 1/4 c. sifted all-purpose flour; 1 tsp. salt; 1 tsp. baking soda; 1/2 tsp. baking powder; 1 c. buttermilk

Heat and stir butterscotch pieces with the water until pieces melt; cool.

Cream shortening and sugar until fluffy.

Add eggs 1 at a time, beating well after each.

Stir in butterscotch mixture. Stir together flour, salt, soda and baking powder; add to creamed mixture alternately with buttermilk, beating with electric mixer on low speed after each addition.

Pour into 2 greased and floured 9 x 1 1/2-inch layer cake pans.

Bake in 375u00b0 oven for 25 to 30 minutes; cool.
