Broccoli Soup ) Canadian Living Recipe

   This broccoli soup is enhanced with the flavors of carrot, onion, and garlic.

   It's also delicious served warm.

   salt and pepper minced fresh parsley

   In saucepan, heat butter over medium heat; cook onion, carrot and garlic for 5 min.

   Stir in stock and bring to bil; add in broccoli.

   Reduce heat and simmer, covered, till broccoli is tender, 15-20 min.

   In blender or possibly food processor, puree soup in batches and transfer to glass bowl.

   Stir in cream; season with salt and pepper to taste.

   Cover and chill for at least 4 hrs oruntil chilled.

    Sprinkle with parsley just before serving.
