Preheat oven to 375 degrees.

Take a sharp knife at an angle and cut a pocket into the pork chop.

Lay the pork chop on two pieces of bacon.

Take approximately 1 tablespoon of boursin cheese and tuck it down into the pork chop.

You can use a fresh peach, or sliced canned peaches in natural juice.

If you use canned peaches, drain them in a colander (I used canned).

Now take one slice of the peach and fit it in on top of the cheese in the pork chop pocket.

Dont over stuff it; you should be able to close up the pork chop easily.

Take the two pieces of bacon and wrap them tightly around the chop.

You will need to use a toothpick to secure the bacon.

Now heat a non-stick fry pan to medium/high heat.

Put the pork chops in the pan for 2 minutes on each side.

You want to get the bacon browning.

Place chops on a baking sheet and place in a 375-degree oven for 25-30 minutes.

Take out and let rest for 5 minutes.

Remove toothpicks before serving.

You could very easily make these chops ahead of time if you are entertaining.

I served them with wild rice and roasted Brussels sprouts.
