1/2 tsp salt
1/4 tsp chili pwdr
1/4 tsp freshly grnd white pepper

1/4 tsp freshly grnd paprika
1 lb Red Grouper fillets, skinned
4 Tbsp. melted butter
1 Tbsp. oil, for frying

Combine flour and spices and mix well.

Brush fillets with butter, then rub spice mix all over fillets.

Heat oil in iron frying pan over high heat till very warm.

Add in fillets and cook 2 to 3 min per side or possibly till fish is opaque and beginning to flake when tested.

Notes: Start with a really warm frying pan.
