Black Bean and Bacon Soup

   Cook bacon in large saucepan on medium heat 12 minutes or until crisp.

   Remove bacon from saucepan; drain, reserving 3 Tbsp.

   of the drippings in pan.

   Add onion, celery, carrots and garlic to drippings in pan; cook and stir 5 minutes or until vegetables are crisp-tender.

   Stir in beans, broth and pepper.

   Reduce heat to medium-low; simmer 15 minutes.

   Pour soup into food processor container fitted with steel blade or blender container; cover.

   Process until pureed.

   Return to saucepan.

    Stir in bacon and sherry; cook until heated through.
