Place half the berries evenly into 8 chilled 1/2-cup molds. Using a fork, whisk gelatin vigorously into 1/2 cup boiling water until dissolved. Stir in sugar and cool slightly.

Pour sparkling wine into a large bowl. Whisk a little of the wine into the gelatin mixture to equalize the temperature, then whisk this back into the wine, letting the bubbles subside.

Pour enough gelatin mixture into the molds to cover the berries. Refrigerate for 30 mins until almost firm. Sprinkle remaining berries over mixture. Top with remaining gelatin mixture. Refrigerate molds overnight.
