SEASON the beef well with salt and pepper.

Spray a non stick frying pan with oil and brown the beef well on all sides.

Transfer to a baking dish and bake in a hot oven 200C for 30-40 minutes or until cooked to your liking.

Wrap in a double thickness of foil and rest for 10 minutes.

COMBINE in a food processor the anchovies, garlic, herbs, olives, capers gherkin, mayonnaise and PHILLY and process until smooth.

SLICE the beef thinly and place onto serving plates with a selection of roasted or chargrilled vegetables.

Spoon over a little Creamy Salsa Verde and serve immediately.
