Basque Mamitako( Tuna Soup)

   Dice onion fry gently in oil in large pot until just starting to colour,add garlic,chopped tomato and deseeded red pepper and fry stirring until tomato begins to soften.Add peeled chopped potato stock and water and simmer gently for 15 minutes until potatoes are nearly cooked.Add canned undrained tuna and roasted red pepper .Simmer 10 mins,add black pepper chopped parsley, check seasoning,serve drizzled with olive oil,lemon wedges,extra parsley and crusty bread.
