Barbecued Meatloaf

   Preheat oven to 350 degrees F.

   Crush the roll of crackers until fine.

   Mix ground beef, ketchup, egg, and crackers together in a bowl.

   Press half the meat mixture in a standard loaf pan.

   Layer with shredded mozzarella cheese (between 1/2 and 3/4 cup) and then top with remaining meat mixture, spreading evenly.

   For the sauce, combine all ingredients in a small saucepan and whisk.

   Over medium heat, bring to a boil, whisking frequently.

   Remove from heat.

   Bake for 1 hour 15 minutes.

    After 30 minutes, remove from the oven and pour an even layer of sauce over the top (you wont use all the sauce, just enough to cover the top) and return to the oven and continue cooking.

    Serve with rice or mashed potatoes and your favorite green vegetable.
