Peel, slice & mash bananas till smooth

Mix milk, cream & sugar in a mixing bowl then add the banana & mix until as smooth as you can

Carefully sprinkle a little xanthan gum into mix and mix in I used a hand blender.

Keep adding a little a time & mixing until it's all used.

If you tip it all in it will go lumpy and gloopy.

Turn machine on paddles turning pour mixture into machine & leave for 60 minutes.

The paddles will squeak toward the end but will keep turning & beep & switch off at the end.

Serve immediately or quickly scoop into container, lid & freeze.
