Preheat your oven to 350u00b0F and lightly oil a bread loaf pan. In a medium-sized sauce pan, bring water to a boil. Cut the beet in half, place in the boiling water and cook for 5 minutes. Remove beet from boiling water and allow it to cool. Once it is cool enough to touch, peel it and grate it.

Peel the bananas and place them in a mixing bowl. Mash the bananas using a fork. Add eggs, coconut milk, olive oil, vanilla and mix thoroughly.

Add the grated beet and mix. Add the quinoa flour and mix well.

Dump in your cinnamon and nutmeg and (you guessed it) mix well. If you are adding honey or a different sweetener and nuts, do so now.

Pour the batter into the loaf pan and bake for 40 minutes or until the bread tests clean.
