Preheat the oven to 350u00b0F. Combine wine, tomato paste, garlic, bay leaves and cloves. Rub into lamb. Refrigerate for at least 30 mins to marinate.

Heat oil in a large flameproof baking pan on high heat. Remove lamb from marinade. Wipe off and reserve any excess. Brown meat well on all sides then transfer to a plate.

Saute onions in same pan for 3-4 mins, until tender. Add reserved marinade, tomatoes and oregano. Cook, stirring, 1-2 mins, until fragrant. Return lamb to pan and add stock. Bring to a simmer on medium heat. Cover with foil.

Bake for 2 hours. Remove from oven and stir in orzo. Cover.

Bake a further 12-15 mins, until orzo is cooked and lamb is tender. Serve.
