Ingredients: 5 x egg yolks; 1 1/2 c. sugar healthy pinch salt; 1/4 tsp vanilla; 2 Tbsp. cake flour; 2 lb Baker's Special cheese; 1/2 pt light cream; 5 x egg whites beaten; 22 x graham crackers rolled fine; 1/2 c. sugar; 1/4 c. margarine melted; 1/2 tsp cinnamon

5 x egg yolks
1 1/2 c. sugar healthy pinch salt
1/4 tsp vanilla
2 Tbsp. cake flour
2 lb Baker's Special cheese
1/2 pt light cream
5 x egg whites beaten
22 x graham crackers rolled fine
1/2 c. sugar
1/4 c. margarine melted
1/2 tsp cinnamon

Beat yolks and sugar to lemon color.

Add in salt, vanilla and flour and mix well.

Add in cheese, cream, and mix well.

Beat egg whites till stiff, then fold (don't beat) into the cheese mix so whites are still visible.

Crust: Mix ingredients together.

Set 1 c. of crust mix aside for top.

Line torte form with remainder of crust mix.

Fill lined form with cheese mix and sprinkle top with c. of crust mix.

Bake 1 hour in 325 degree oven.
