With your hands, or with the dough hook of a mixer, knead the flour, yeast, salt, sugar and 1 1/4 cup lukewarm water to make a smooth dough. Cover and allow to rise in a warm place for 40 mins. Meanwhile, heat a frying pan and fry the bacon until crispy. Add the onion and fry for 2 mins. Allow to cool.

Line a baking sheet with parchment paper. On a floured work surface, knead the bacon and onions into the dough. Continue to knead for 5 mins, until dough is supple. Shape into a loaf, lay on the baking sheet and score across the top with a knife. Allow to rest for 20 mins.

Preheat the oven to 400u00b0F. Bake for 30-40 mins, until the loaf sounds hollow when tapped. Cool for 30 mins and spread with butter to serve.
