Whisk together butter, sugar, eggs, flour, cocoa powder, buttermilk, vanilla and a pinch of salt until creamy and pale. Shape into 48 balls (each using around 1 tsp mixture) and arrange on prepared trays, leaving space to allow for spreading. Bake for 12 mins. Let cool completely.

Meanwhile, to make the filling, whip butter until pale and fluffy. Gradually add powdered sugar and vanilla. Pour 1 cup cold water over mixture and swish around for 10 seconds. Pour water out and whip mixture again for 2 mins. Repeat process 5 more times until mixture is almost white. Transfer to a piping bag.
