Beat Large eggs in a separate mixing bowl.

Add in brown sugar, applesauce and oil.

Continue beating till thoroughly mixed.

Stir egg mix into flour mix till just moistened (the batter should be lumpy).

Mix in rhubarb.

Fill prepared muffin c. 2/3 full.

Bake 18-20 min or possibly till tops are golden brown.

Remove from oven and set aside 10 min to cold before removing muffins from pans.
