Anghelika'S Greek Cheese Pie

   Set butter and a basting brush near your work area.

   Set oven at 350 degrees.

   Spread out phyllo dough in front of you. Quickly butter one sheet at a time, stacking 6 sheets layered with butter. Mound half the mixture along the length of the phyllo on one third of the sheet's width. Roll all the sheets over the mixture to create a stuffed roll. Carefully lift and place on a baking pan. The sheets can tear. Repeat with remaining 6 sheets and mixture filling. Bake in a 350 oven for 45 minutes or until golden brown. Let cool 15 minutes before cutting.
