Vanilla and Vodka Cheesecake

   Split the vanilla bean lengthwise and scrape out seeds with a knife.

   Combine the vanilla seeds, bean, sugar and vodka in a small saucepan.

   Stir over low heat until the sugar is dissolved.

   Bring the mixture to the boil, and simmer 1 minute.

   Cool, then discard the vanilla bean.

   Beat the Philly* and extra sugar in a large bowl with electric mixer until smooth.

   Add the vodka syrup and gelatine mixture, and mix well.

   Gently fold in the whipped cream until combined.

   Pour the mixture into a lined 20cm springform pan.

    Refrigerate for 2-3 hours or until set.
