Make the mango ice cream base: In a medium bowl, whisk together the egg yolks and 3/4 cup of thesugar until blended.

In a heavy, large non-corrosive saucepan, bringthe milk, cream and 1 tablespoon of the remaining sugar to a gentle boil.

Remove the saucepan from the heat.
