Zucchini Pie

   Heat oven to 400u00b0 and grease 10 x 1-inch casserole dish. Sprinkle zucchini, tomato, onion and cheese in dish.

   Beat remaining ingredients until smooth and pour into dish over mixture.

   Bake until knife comes out clean when inserted in middle, approximately 20 minutes.

   Can add chopped celery, mango, hot pepper or oregano for some spice.
