2 tbsp chopped dill

4 oz feta cheese, coarsely crumbled
1/2 cup pitted black olives, sliced
4 None eggs, lightly beaten

Grease a foil-lined 9 inch springform pan; place on a baking pan. Cook rice in a large saucepan of boiling water for 30 mins or until tender. Rinse under cold water; drain well.

Preheat the oven to 350u00b0F. Heat oil in a large skillet on medium heat. Add onion and cinnamon; cook and stir for 5 mins or until onion softens. Add zucchini; cook and stir for 5 mins. Stir in spinach. Transfer mixture to a large bowl. Stir in dill, lemon peel, feta, olives, rice and egg until well combined. Pour mixture into prepared pan; smooth the top.
