Xocai Chocolate Amaretto Cookies

   Mix first three ingredients in a bowl.

   Beat egg whites until not quite stiff in a separate bowl.

   Add almond extract and amaretto to the egg whites; gradually add dry ingredients.

   Mix well.

   With two teaspoons, form walnut sized potions and place on parchment-lined cookie sheet.

   Let dry at room temperature at least 6 hours or overnight.

   Bake at 350 degrees for about 12 minutes.
