In a large bowl, whisk together flours, sugar, baking powder and salt.

In a separate large bowl, melt the butter (heat it in the microwave for 30 seconds at a time until melted). Then whisk in the eggs, milk, and vanilla.

Whisk wet ingredients into dry until well combined into a smooth batter. Fold in lemon zest and berries.

Let batter rest 5 minutes before using, while your waffle maker heats up. Heat your waffle maker according to manufacturer's instructions.

When waffle maker is hot, pour about 2 cups of batter into the centre of the lower grid and spread it evenly around the whole waffle maker with a heatproof spatula. Close lid of waffle maker and cook until tone sounds (or whatever is the indicator on your waffle maker). Make sure edges are crisp and golden. Remove the cooked waffle carefully and set on a plate. Repeat with remaining batter.

In a 4-square waffle maker like ours, this recipe makes 16 waffles. Best served warm. They also freeze well: Just reheat in the toaster or microwave as needed.
