Great Northern beans (use dried, cooked or canned); 2 lb. boneless, skinless chicken or turkey breasts; 2 medium onions, chopped; 2 (4 oz.) mild chopped chiles; 4 cloves chopped garlic; 1 Tbsp. olive oil; 6 c. chicken stock/can broth; 2 tsp. cumin; 1 1/2 tsp. oregano; 1/4 tsp. cayenne; 1/4 tsp. ground cloves; 3 c. shredded Monterey Jack; 1 c. sour cream (optional); 1 c. prepared salsa (optional)

1 lb. Great Northern beans (use dried, cooked or canned)

6 c. chicken stock/can broth

Cook beans as usual, if you want.

Bring water with some celery and onion to a simmer.

Poach the chicken or turkey 15 to 20 minutes.

Cool and dice.

Saute onion in olive oil until clear. Add garlic, chiles, herbs and spices. Saute 1 to 2 minutes. Add beans and stock, draining water if you cooked your own.

Garnish with cheese, sour cream and salsa, if desired.
