Ingredients: 250 ml Watermelon (deseeded, cut into 1.5 cm cubes); 70 grams Feta cheese; 50 grams Plum tomatoes or tomato (cut into 1 cm cubes); 40 grams Peach or nectarine (cut into 1 cm cubes); 1 tbsp Lemon or lime juice; 2 tbsp Extra virgin olive oil; 1 1/2 tbsp White wine vinegar; 1/2 tbsp Lemon juice; 1 tbsp Shallots or onion (finely chopped); 1 clove Garlic (grated); 1/8 tsp Salt; 1 dash Black pepper; 2 tbsp Pine nuts (or sliced almonds, pistachio, walnuts); 10 small olives (pitted); 10 Cape gooseberries/ground cherries (optional); 1 dash Basil leaves (finely chopped)

Servings: persons

250 ml Watermelon (deseeded, cut into 1.5 cm cubes)

10 small olives (pitted)

Chill the watermelon, peach and tomatoes in the fridge.

Combine the garlic and salt, add the other ingredients, and mix to make the dressing.
