Warm Chicken And Fig Sandwich

   Heat a pan and add olive oil. Sprinkle a little salt and pepper on the chicken, and put it in the pan to cook--make sure not to overcook it. Decide how you want to prepare the chicken--if you want it shredded, shred the chicken while it's still hot. If you want to cube or dice the chicken, let it cool first.

   Cut the shallots into half-inch sections, and put them in a hot pan with olive oil, and sprinkle on a little salt. Saute the shallots lightly, and add a bit of butter to the pan to finish them off. Add to the chicken.

   Add ricotta cheese--you want a texture similar to chicken salad. Heat the mixture up if you need to--it should be warm.

   Toast the bread, and put fig spread on one slice. Spread the chicken mixture on the other slice, and put the two slices of bread together.
