Preheat the oven to gas 4 / 180C / 350F and grease & flour a loaf tin

Mix the flours, baking powder, cinnamon, xanthan gum (if using gluten-free flour) and salt together

Add in the amazake, syrup, oil, apples and raisins

Stir into a thick but pourable batter add a few tbsp of water or rice milk as needed

Bake for 25 - 35 minutes until golden and the top is springy.

You can test in the usual way with a toothpick

Let cool in the tin for 5 minutes before turning out onto a wire rack

Cool completely then slice.

Recipe can be doubled, bake for 45 minutes then cover with foil so it doesn't burn on top and bake a further 15 - 20 minutes.
