Heat 1 tbsp of oil in a frying pan and saute the onion and garlic. Add the bulgur and pour in the stock. Bring it to the boil and simmer on a low heat for 5-10 minutes. Season to taste and transfer it to a bowl and leave it to cool slightly.

Mix the eggs, cheese, flour, and parsley, and combine the mixture with the bulgur wheat. Divide the mixture into 2 portions and press them into flat patties. Heat the remaining oil in a pan and fry them over a medium heat for 3-4 minutes on each side.

Mix the mayonnaise and mustard and spread the mixture on the bottom halves of the rolls. Layer the tomato slices, lettuce and veggie burgers and top it off with the upper half of the roll.
