1 vanilla bean, split lengthwise

1/2 tsp. ground nutmeg, divided
1/4 cup rum
3 eggs
1/2 cup whipping cream

Mix graham crumbs and butter; press onto bottom of 9-inch springform pan.

Beat cream cheese and 3/4 cup sugar in large bowl with mixer until blended.

Scrape inside of vanilla bean into batter; discard pod.
