Gradually whisk in hot cream.

Add enough hot water to roasting pan to come halfway up sides of custard cups.

Bake until flans are softly set, about 45 minutes.

Using tongs, remove custard cups from roasting pan and cool.

Cover and refrigerate flans overnight.

Whisk brown sugar, butter and remaining 3/4 cup cream in heavy medium saucepan over medium heat until sugar dissolves, about 3 minutes (do not boil).

Cool caramel sauce slightly.

Spoon warm caramel sauce over flans and serve.
