Ultimate Chocolate Cake

   for the frosting:

   in a small saucepan, combine the sugar & cream & bring to a boil over medium heat, stirring occassionally. Reduce heat, and simmer for 6 minutes. add the chocolate and butter and stir until melted. pour into a bowl and stir in the vanilla. let the frosting cool, whisking gently from time to time. dont overwhip or you will create air bubble.

   For the Cake:

   Preheat oven to 350. butter the bottom of 2 9 inch round cake pans. line botton with parchment papper. butter & flour the sides of the pans.

   In a bowl, combine the sugar, flour, cocoa, salt, baking powder, baking soda, mix on low speed. mix in eggs, canola oil, and milk.

   divide the batter evenly and and bake for 30 -35 minutes, or until a toothpick comes out clean.

   remove from the oven and cool on a cooling rack for 5 minutes, and then turn the layers out onto the rack and cool completly.

   when the cakes have cooled, check the frosting, it should be the consistency of mayonaise. if it is still too thin, allow it to cool longer.
